How to Make Kombucha Fizzy

Then add two tablespoons of sugar per gallon of water (or more if desired), along with your tea of choice—black tea is most common but green or white will work too. Fill your container up to three inches from the top with cooled boiled water and leave out at room temperature (about 70°F) for 7-10 days until it tastes good to you. 1. Always store your Scoby in a glass jar with a loose-fitting lid (like a Mason jar). This will allow it to breathe and prevent mold from growing on top of the Scoby.
 
2. Store your glass jar in a dark, cool place (ideally 55 degrees Fahrenheit or lower), like the back of your fridge or on an upper shelf if you don't have one of those coolers that goes in the fridge itself. You can also store it outside during the winter months if you live in an area where temperatures stay consistently below 55 degrees Fahrenheit year round.
 
3. Never store your Scoby in plastic because it will cause mold growth over time!
